So I have been in a baking mood lately and decided that I would try a new cookie recipe. I know that craving sweets means that you are lacking certain things in your diet, but it's that time of the month so shut the fuck up!!! <3 Anyways... I found this recipe again on Pinterest which led me to
Better With Sugar and anything that says its better with sugar I am all for. And they are amazing... So good....
Ingredients:
- 2-1/4 C all purpose flour
- 1 tsp baking soda
- 1-1/2 tsp cornstarch
- 1/2 tsp salt
- 3/4 C unsalted butter, softened
- 3/4 C light brown sugar, packed
- 1/2 C granulated sugar
- 1 egg + 1 egg yolk
- 2 tsp vanilla extract
- 1-1/2 C semi sweet chocolate chips
Directions:
- In a medium bowl, mix together the flour, baking soda, cornstarch, and salt. Set aside.
- In a separate large bowl, mix together the butter, brown sugar, and granulated sugar.
- Beat in the egg, and then the egg yolk. Then beat in the vanilla.
- Gradually mix the dry ingredients into the wet ingredients with a rubber spatula. Fold in the semi sweet chocolate chips.
- Cover the bowl of dough with plastic wrap and chill in the fridge for about 2 hours.
- Once it's chilled, preheat the oven to 350 degrees F. Let the dough come to room temperature for about 10 minutes.
- Line a baking sheet with parchment paper.
- Roll the dough into balls, about 2 TBS of dough each. Put the balls on the cookie sheet, I fit 12 on one of mine.
- Bake for about 11-12 minutes, depending on the size of the cookies. They will be done when they are a tiny bit firm when you touch them, but still very soft and don't quite look done. They'll keep baking on the sheet.
- Take them out of the oven and let them sit on the sheet for about another 5 minutes. Then transfer to a cooling rack.
- Store in a container at room temperature.
